"I'm a sixth-year associate who is open to starting at a new firm at a different class year. Can I put that in my cover letter, or is that selling myself short with no information?"
No, I don't think you need to put that. These are all things where the law firm can ask you that if they want. If you're switching practice areas or something then you would put that in a cover letter, to just say I'm willing to start at a lower class level, but no, you typically don't want to say anything about being open to certain different class level.
